Dinner in 6-Minutes! It’s True!

For me, getting creative in the kitchen while listening to some amazing tunes in the background is my jam. I’ve done all sorts of cooking, from the kind where I strap on an apron and settle in for an hour or more to the kind where speediness is the goal and lots of microwaving is in play.

And cookbooks. Do I love cookbooks. Don’t you love cookbooks, too? From the glossy, thick ones to the ones in the bargain bin, there’s joy for me in perusing them.

Recently a good friend of mine, Karen Nochimowski released (after much anticipation) a cookbook called “6-Minute Dinners (and More!).”

This cookbook is all about flavor and ease with recipes that only require 6 ingredients (or less) and 6 minutes of prep. For those who can’t always find the time to cook, these meals will save you both time and money without compromising on flavor.

And trust me, as a personal friend of Karen’s, I can tell you that these recipes were born out of necessity! How she juggles getting all her boys where they need to be, writing, running a food pantry, and still has time to make dinner, is beyond me!

With 100 recipes to choose from―including allergy-free options throughout―this cookbook provides endless options for those busy days.

Karen’s recipes have been featured in dozens of magazines and online publications, including HuffPost, Working Mother, Costco Connection, TODAY Parents, Chicago Tribune and she has appeared on LIVE with Kelly and Ryan, WGN, FOX, and ABC.

AND, by purchasing this cookbook, donations will help feed those with food insecurity. So far, Karen has provided over 20,000 homemade meals and over 15,000 pounds of non-perishable food to those in need. It’s a WIN-WIN! You can find you’re your local bookstores or order here:

Cook your way to amazing dinners with only 6-ingredients with recipes like:

• The Best Homemade Sloppy Joes

• Sheet-Pan Chicken Fajitas

• Zesty Lemon-Herb Chicken

• Brioche French Toast Casserole

• Spinach and Goat Cheese Frittata

• Creamy Carrot and Sweet Potato Soup

As a busy mom, I have to admit that I’ve had a lot of fun making these meals. I certainly appreciate home-cooked food for Isaiah over Door Dash or digging something out of the freezer, and these take way less time!

I also couldn’t recommend a cookbook written by a more wonderful, warm, altruistic, mom.
